Eggs and bacon weren't calling my name. I wanted fried rice.
Now, being keto doesn't mean I have to ignore a craving. I've learned that sometimes I just have to figure out how to make what I'm craving work for the way I've chosen to eat.
And this morning? I made it work.
I had steak left over from last night's dinner, so I decided to give those leftovers a whole new life.
I started with cauliflower rice, scrambled eggs right into the rice, then added shiitake mushrooms, green onions, and pieces of that leftover steak. A little oyster sauce brought everything together and gave it that rich, savory flavor I was looking for.
What I Threw in the Pan
This wasn't one of those mornings when I pulled out measuring cups and carefully planned a recipe. I cooked by taste and used what I already had:
- Cauliflower rice
- Eggs, scrambled right into the cauliflower rice
- Leftover steak, cut into bite-size pieces
- Shiitake mushrooms
- Fresh green onions
- Oyster sauce
- A little cooking oil or butter for the pan
- Seasonings to taste
I cooked the mushrooms until they started getting tender and flavorful, added the cauliflower rice, scrambled the eggs right into the mixture, and then added my leftover steak so it could warm through without getting overcooked.
The green onions added freshness and a little bite, while the oyster sauce gave everything that savory, almost takeout-style finish.
Keto Doesn't Have to Mean Missing Out
This is one of the biggest things I'm learning on this journey.
I don't want to spend my life thinking about all the things I can't eat. I'd rather ask myself:
I wanted fried rice.
So I made fried rice.
I just made my version.
And because I used steak from the night before, this was also a reminder that leftovers don't have to feel like leftovers. Sometimes yesterday's dinner is just the beginning of today's meal.

Don't overcook your cauliflower rice. You want it tender but still with a little texture. If you cook it too long, it can release too much moisture and become mushy.
And when you're using leftover steak, add it toward the end. It's already cooked—you just want to get it hot. That helps keep it tender instead of cooking it twice.
One more thing: Oyster sauces can vary quite a bit in sugar and carbohydrate content, so check the label if you're closely tracking your carbs.
Craving Satisfied.
This wasn't fancy. It wasn't planned. It was simply what I wanted this morning—and it was good.
That's real life in my keto kitchen.
